Greetings!
The chill of winter is upon us as we begin the new year - new
decade in fact. Listening to the wisdom of the seasons can make life
run more harmoniously - and isn't that just what we are seeking?
Harmony, health and happiness are the vision of many people's new
year's resolutions.
The shorter days of winter tell us this
is a time to slow down so we may enjoy the bursting effects of the
upcoming spring It is a time perhaps to stay inside and seek the
inner warmth that perhaps spending more time with family and friends
may bring. What steps are you taking to slow down this
winter?
According to the chinese five element theory, the
element associated with winter is water, without which we cannot
survive. Think of the word fluid for a moment. Isn't that how you
wish your life to run - with fluidity - smooth - forward motion -
like a stream. Our body, like the earth is 70 or so % water. Did you
know that sea water is almost identical to blood plasma? Without
fluidity our circulation would be stagnant - waste products would
build up, our lymph glands would clog, nutrients could not pass
through cell walls, tears, saliva, urine and perspiration would not
flow.
The organs associated with winter is the kidney and
bladder. The flavor is salty. Poor quality sodium can cause water
retention, high blood pressure, kidney and heart trouble. Chosing
sea salt or himylian pink salt are good choices of quality sodium.
This is also a good time to chose ocean food like fish and sea
vegetables. Miso soup with some carrots, onions and garlic is a
great way to help ward off colds this season.
The emotion
associated with winter is fear - for instance many are known to "pee
their pants" when they are scared. Our adrenal glands sit right on
top of our kidneys and release hormones to help us deal with stress
like the fear of the lack of time or not having enough. Bladder time
is between 3 to 5pm when many of us tend to feel run down and
exhausted - this may be a signal that our adrenals are weak from the
stress and fears of our day. This is an important time to take a few
moments to breathe, relax and check in with yourself before you get
home to start the mayhem that may be awaiting you.
In short,
enjoy the wisdom of winter which may inspire you to make changes to
bring you harmony, health and happiness all year
through.

This class
is geared toward winter foods to create harmony in your body and keep it
working efficiently for you. Chef Helena and Andrea prepare foods in a
joyful setting and inspire you to make changes in your diet with fun, fact
and delicious food.
When: Tuesday, January 19th at 9:30 am or 7pm Where: Andrea's
Kitchen, Yorktown Hts, NY Fee: $50 with prepayment by Friday before
class or $55 at the door.

Nutritious!
This
series is designed to help teens better understand not only what to eat,
but when to eat. Looking at food as nourishment and not fearing food is
key to forming a healthy relationship with your cuisine! If you're an
athlete you'll want to learn how to create the energy you need to better
your performance! Want to improve those grades? You will also learn how
food can help you think more clearly, keep your focus and achieve the
grades you never thought possible. Want to build a healthier body - do it
with quality food choices! Whatever your goal, you won't want to miss this
fun-filled series. Our menu this month will include a variety of healthy
muffins and cookies!

RECIPE OF THE
MONTH | |

WINTER WHEATBERRY
SALAD
2 cups
wheatberries 6 cups water 1 cup chopped walnuts 2 medium apples,
unpeeled, cored and chopped 1 cup raisins 1 cup finely chopped
parsley ¼ cup apple cider vinegar ¼ cup apple juice 1 tbs.
salt ½ tsp. freshly ground pepper ½ tsp. ground nutmeg ½ tsp.
cinnamon ¼ cup extra virgin olive oil 1/8 cup lemon
juice
Rinse wheatberries well. In a saucepan bring the water to a
boil. Add the wheat berries to the boiling water and simmer them uncovered
for about 50 minutes or until they are totally cooked through . Wheat
berries retain a firm, chewy texture when cooked. Drain the water and set
aside the wheat berries to cool. Then transfer the wheat berries to a
large mixing bowl, and add the walnuts, apples, raisins, parsley, apple
cider vinegar, apple juice, salt pepper, nutmeg, cinnamon, olive oil and
lemon juice. Mix everything thoroughly. Add more salt if necessary and
serve.
